Toasted arborio rice salad with saffron and peas

I created and made a new salad this weekend for a small wedding and it turned great. It is a very unique arborio rice salad which is a classic short grain Italian rice, named after the town of Arborio, in the Po Valley, where it is grown and usually used for making risotto and paella. The salad is summer comfort food, in that it is hearty, creamy and very rich; enjoy!
